Vegan Cauliflower ALFREDO.

Amazing vegetarian pasta sauce that even the kids will enjoy :)

INSTANT POT CAULIFLOWER ALFREDO

Vegan and Dairy Free Serves 4


INGREDIENTS

500g (1lb) frozen cauliflower/ steamed till very cooked

1 large onion/ diced

2 garlic cloves/ diced

2 cups water or vegetable broth

¼ cup nutritional yeast

¼ teaspoon nutmeg (optional)

3 cups pasta of choice

1 cup of white wine

1 cup baby spinach/ finely sliced

Olive oil

Salt & Pepper



DIRECTIONS [FOR A 5.7LT/ 6 QT INSTANT POT]


1. Steam the cauliflower for 10mins with 1 cup of water in the Instant Pot [manual/pressure cook function set to High. Quick pressure release once done]

2. Mash or blend the cauliflower till a smooth consistency- don’t drain the liquid, just mash this in with the cauliflower.

3. Remove the cauliflower from the Instant pot and set aside.

4. Rinse out the Inner pot of the Instant pot and place back into position.

5. Set the Instant Pot to sauté Hot, and drizzle the inner pot with oil, allow this to heat up till Hot is displayed.

6. Sauté onions and garlic, stirring often to prevent sticking. Allow the vegetables to get a little bit of colour- this is the flavour developing.

7. Season with ½ teaspoon of salt and black pepper

8. Deglaze the pan with white wine and using a wooden spoon, scrape the base of the pan to release anything stuck to the bottom.

9. Press cancel on sauté function.

10. Pour pasta over the onion mix and spread it to a single layer.

11. Pour cauliflower purée over pasta- don’t stir.

12. Add vegetable stock powder to your water, stir and pour into the pot. (Can use plain water or or Pre-made vegetable broth also)

13. Place lid on Instant Pot and close, set your vent to sealing (instant pot nova does this automatically)

14. Set Instant Pot to manual pressure cook, High for 4 minutes. Once done, Use Quick pressure release. Then open the lid once the steam is vented and the pin drops down. 15. Stir the Alfredo

16. Add and stir in the nutritional yeast, spinach, nutmeg (optional) and season to taste. 17. Serve Hot topped with additional nutritional yeast if desired.




**Notes: To make this with cheese instead of nutritional yeast, replace the yeast with ½ cup of grated Parmesan cheese. Or a mixture of cheddar/tasty and Parmesan. Chicken stock/broth can also be used but the Alfredo will no longer be vegan. Fresh cauliflower can be used instead of frozen- the method is the same, just pre cut the cauliflower into pieces before steaming.
