Fresh Summer Salsa and Guacamole

Fresh Summer Salsa:
Ingredients:
1 Small capsicum Chopped
2 Cups dices fresh tomatos
1 spring onion
2 Tablespoons fresh chopped corriander (Cilantro)
2 chillies- diced
pinch of salt
pinch of pepper
1 teaspoon sugar
1 teaspoon smoked paprika
1 teaspoon cumin- ground
1 teaspoon ground corriander
METHOD:
Chop all the vegetable and combine in a bowl, mix well.
Season with the salt and pepper and the spices. mix well.
Serve with corn chips or as a side to any Mexican inspired dish.
Can be kept in the fridge for 3 days.
Guacamole
Ingredients
2-4 avocados, skin and seeds removed.
1-2 limes
1/2 teaspoon of garlic or equivalent in garlic scapes
2 Tablespoons fresh coriander (cilantro)
1 whole spring onion- diced
1 small capsicum finely diced
2 cherry tomatoes
pinch of salt
pinch of pepper
1 teaspoon corriander
1 teaspoon cumin
1 teaspoon smoked paprika.
METHOD:
Remove flesh from avocados and mash in a bowl.
dice the vegetables and set aside.
add lime juice and seasonings to the avocado and mix well.
add the vegetables and mix well.
taste and adjust seasonings as required.
If storing, keep in the fridge and its helpful to keep an avo seed in the mixture to prevent browning.
