Todays video is all about water bath canning all of our freshly harvested beetroot.
The recipe I used in todays video is from the Ball complete book of home preserving, on page 309 'Pickled Beets"
Water bath canning is the process of heat treating and sealing foods that have been treated with an acid (aka vinegar in this case) and making them shelf stable for a long time.
Equipment needed to waterbacth can are a large stock pot or waterbacth canner, a trivet/rack or towel in the base of the pot to stop the jars being in direct contact with the base of the pot. Canning jars, lids (flats) and rings.
Water bath canning is a very specific scentific process in order to maintain a safe long term food storage solution so I only use pre tested recipes when I am canning- I don't leave anything up to my creative impulses.
