Restaurant Quality Risotto- Leek and Mushroom with Roasted Sweet Potato and Rocket.

Leek and Mushroom Risotto with Roasted Sweet Potato and Rocket

Serves 4-5

Ingredients:

1 Medium Sweet Potato peeled and diced.

Olive Oil

Salt & Pepper

1 onion diced

1 clove garlic diced

2 cups mushrooms sliced

1 medium leek sliced

2 cups Risotto (arborio) rice

1 cup white wine

3 teaspoons stock powder (vegetable or chicken)

3 cups water

2 Tablespoons Butter

1/3 cup Parmesan cheese grated

1-2 handfuls Rocket (Arugula)



Directions:

1. Place sweet potato onto a baking tray and roast in a hot oven for 10 mins while you prepare the risotto.

2. Set the Instant Pot on Saute mode, normal medium heat.

3. add oil to the inner pot.

4. Add onions, leeks and garlic and sauce till translucent.

5.Meanwhile, add the stock powder to the water and set aside.

6. Add mushrooms to the inner pot and saute.

7. Season with Salt and Pepper.

8. Add the Arborio Rice to the inner pot and stir well to combine, and toast the grains slightly. Taking care not to allow any grains to stick to the base of the pot.

9. Add Wine to the inner pot and deglaze the pan, stir well.

10. Add the prepared stock/water mixture to the inner pot and stir to combine.

11. Secure the lid to the Instant Pot and set the Vent to SEALING ( I am Using the Duo Nova, and this is automatic for this machine)

12. Cancel Saute function , and set the machine to Pressure Cook HIGH for 15 Mins.

13. Once the timer goes off, use the QUICK RELEASE method of releasing the steam and only after the valve has dropped is it safe to open the lid.

14. Once safe to do so, open the lid of the Instant Pot and gently give your risotto a stir.

15. In the video, I cancelled the PC function and set to SAUTE - this is optional, not necessary, but will result in a thicker risotto.

16. Stir in butter until fully combined.

17. Stir in parmesan cheese

18. Serve the risotto with roasted Sweetpotato on top, a sprinkle of Rocket leaves, freshly ground pepper and a drizzle of olive oil for a Restaurant Quality Meal.
