Glazed Doughnut holes - Krispy Kreme Copycat

INGREDIENTS
2 teaspoons Yeast
60ml Warm water
265ml Scalded milk
1/2 cup sugar
60g butter
4 1/2 cups Plain Flour
Glaze:
2 cups icing sugar
1/4 cup water
2 teaspoons vanilla extract.
DIRECTIONS
1. Place milk into a saucepan and heat to scald- bring to the boil, then remove from the heat immediately.
2. Remove milk from the heat and place in the bowl of a stand mixer.
3. Add the water to the milk and set aside until cooled to 37* Celsius.
4. Once milk/water reaches temperature, add the yeast and a sprinkle of the sugar and mix with a whisk to combine. Allow to rest for 10 mins.
5. Add eggs and butter to the mixture and mix with the dough hook on a stand mixer.
6. Once combined, add the remaining sugar, salt and flour.
7. Mix with a dough hook to combine. the mixture will be a wet paste like consistency.
8. Cover the dough with a damp towel and allow to rest/ rise for 40 mins.
9. Meanwhile prepare the glaze, by mixing the water and vanilla with the icing sugar until free from lumps and a pourable consistency.
10. Heat oil in a pan or a deep fryer to 170*Celsius.
11. scoop tablespoon sized balls and gently drop into the oil, turning frequently for even cooking.
12. once browned, remove from the fryer with a slotted spoon, or tongs, and drain on a rack over a bowl.
13. Dip dried and warm doughnuts into the glaze, covering completely before resting on a wire rack, to drain.
14. Enjoy, with melted chocolate, a dusting of cinnamon sugar or as they are....
