Delicious Beef Bolognaise

This is the Bolognaise recipe from the Youtube video where I make a couple of freezer meals including Lasagne. This is a double batch and would serve a family of 8 in one sitting per batch. This is enough bolognaise sauce to make two large lasagnes, two spaghetti bolognaise dishes or one of each.

INGREDIENTS:
1-2 Tbs olive oil.
3 Diced Carrots
2 Diced Onions
2 stalked diced celery
3 Tbs Garlic
1-2 cups Mixed vegetables (eg Broccoli, Cauliflower, zucchini)
2 whole capsicums - diced.
1 kg Beef mince
1 Cup White wine
1 cup tomato paste
1x 680ml jar passata
1x 500ml jar remade pasta sauce (homemade preferred)
1/4 - 1/2 cup mixed Italian herbs
1 Tbs raw sugar
2 teaspoons salt
Sprinkle of pepper.
fresh herbs * optional ( Basil, oregano, parsley)
Method
Dice all your vegetables and set aside in a bowl.
add oil, onion, garlic to a large pot and set onto the heat to start caramelising.
add minced beef and continue to cook, breaking up the meat until browned.
Once browned, add the diced vegetables, white wine, and mix well.
Add the tomato paste, pasta and jar-ed pasta sauce. mix well.
since out the jars and add this water to the pot also.
mix well, and set on low heat to continue to cook for 10 mins at a simmer.
add the mixed herbs, sugar, salt and pepper, mix well and continue to simmer for another 20-30 mins.
add any fresh herbs at this point and turn off the heat.
This is now ready to be served on cooked noodles, or set aside to make into lasagne.
This can be freezer as is, once cooled in a zip lock bag and then used as bolognaise at a later date.
