Banana and Coconut Bread

Ingredients:
140g Butter
1 1/2 cups Brown Sugar
2 Eggs
1 teaspoon Vanilla Extract
2 Very Ripe Bananas
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon ground ginger
3/4 cup desiccated coconut
280g Self Raising Flour
1 cup Walnuts
Directions:
1. Preheat your oven to 180c
2. line a loaf tin with baking paper and set aside.
3. In the bowl of a freestanding mixer, place butter and sugar and mix till well combined. 4. add eggs, one at a time, mixing between each addition.
5. meanwhile, mash the bananas in a seperate bowl.
6. Turn off the mixer, add the mashed bananas and vanilla, mix to combine.
7. Turn the mixer off again, add the spices, coconut, flour and nuts. Mix to combine.- don't over beat.
8. Pour batter into the prepared loaf tin and bake in the oven for approx 55mins, or until a skewer (inserted into the middle of the batter) comes out clean.
9. Cool in the pan for 5 mins, before transferring to a rack to cool.
10. Serve warm with butter and a cup of your favourite tea.
NB Can be frozen once cooked, reheat in the microwave or toaster for a crunchier texture.
